Queen Cakes (Egg less):
Ingredients:
170 gms Flour, (maida), 3 level tsps. Baking powder, a pinch of salt, 70 gms Margarine; 50 gms Sugar, 1 level tbsp golden syrup; 300 ml. Milk and water and 30 gms Sultanas.
Method:
Cream the margarine and sugar together. Add the syrup and salt, and beat well again. Sieve the baking powder and flour together and add to the creamed mixture with milk and water. Stir in the cleaned and dried fruit. Put mixture into greased patty tins. Bake at 375 degrees F for 20 to 25 minutes.

Tea Cakes:
Ingredients:
225 gms Flour, 4 eggs, 225 gms Sugar, 115 gms Butter, 100 gms Sultanas, 1 tsp Soda bicarb and a pinch of salt.
Method:
Powder sugar. Cream butter and sugar till light and fluffy. Add beaten egg yolks, one at a time. Sift flour and soda bicarb. Fold in flour and cleaned sultanas alternately. Add salt. Last of all; fold in stiffly beaten whites of eggs. If required, add a tbsp of milk or warm water. Bake at 375 F for 20-25 minutes.

Pound Cake (A):
Ingredients:
250 gms Flour (maida), 250 gms Sugar (soft), 250 gms Butter, 5-6 eggs, tsp. Baking powder and 1 tsp. Vanilla essence.
Method:
Cream butter and sugar till light and fully. Add yolks of eggs and flavoring and beat mixture well together. Slice flour with baking powder. Whisk the egg whites to a stiff froth. Add alternately the flour and egg white to the creamed mixture and blend lightly. Pour the mixture into a lined cake tin and bake at 300 F for about 11/2 to 2 hours.

Pound Cake (B):
Ingredients:

cup butter or vegetable shortening, 1 cup sugar, 3 eggs (well-beaten), 1 tsp. Vanilla essence, 3 cups flour, 2 tsps Baking powder, tsp. Salt and 1 cup milk.
Method:
First grease and flour baking pan thoroughly. Cream butter till soft. Powder sugar and add gradually, creaming till light and fluffy. Add well-beaten egg yolks gradually. Sift dry ingredients and fold in alternately with the milk to which vanilla essence has been added. Beat egg whites stiff and dry. Fold in egg whites last. Bake at 375 F. for 20-25 minutes or in a home baking pan for about half an hour over low gas flame.

Vegetarian Cake:
Ingredients:
1 tea cup semolina, 1 teacup sugar, 1 tea-cup curds, 1 tsp. Soda, 4 tsps. Ghee, (melted), 1 tsp. Vanilla essence, 4 cardamoms powdered, 10 to 15 raisins, 4 tbsps Chopped nuts. Add soda to the mixture and stir well.
Method:
Mix semolina, sugar and curd. Stir well. Add raisins, nuts, powdered cardamom and vanilla essence. Take a medium Pre-heat oven and place the pan inside. Bake for 30 to 45 minutes in a moderate oven till cake turns brown.

Banana Cake:
Ingredients:
2 cups maida, 2 tbsps Ghee, 2 tbsps Baking powder, 3 fully ripe bananas (medium size), tennis-ball size gur (jaggery), 8 walnut kernels and cup water.
Method:
Melt ghee in a deep pan. Grate jaggery, transfer into pan containing molten ghee. Add water. Heat until solution is clear, with all jaggery dissolved. Keep aside. Sieve maida and baking powder. Cut bananas into small bits (not slices). Cut walnut kernels into small bits. Mix maida, baking powder, banana bits and walnut bits and prepare the dough. Bake for 45 to 50 minutes in a moderate oven.

Plain Sponge Cake:
Ingredients:
115 gms refined flour, tsp. Baking powder, 115 gms Sugar, 60 gms Butter or margarine, little milk to mix to dropping consistency, 2 eggs and a few drops of vanilla or other flavoring.
Method:
Sieve flour and baking powder. Crush sugar if necessary. Cream butter and sugar very well until light and fluffy. Beat eggs. Add flavour and add to mixture gradually, beating all the time. Fold in sieved flour very lightly with a little milk to make a dropping consistency. Put into prepared tin and bake at 190 degrees C. for 25 minutes. Cool it.

Carrot Cake Fry:
Ingredients:
250 gms Carrots, grated, 250 gms Potatoes, grated, 2 onions finely minced, cup milk, 3 eggs, lightly beaten, tsp. Pepper, freshly ground, cup flour, 1 tbsp fresh parsley, finely chopped, 1 tsps Salt and oil for frying.
Method:
In a deep bowl, mix the carrots, onions and potatoes. Add all the other ingredients and combine well. Heat oil in a frying pan. Take one tablespoon of mixture and drop into the hot oil making little pancakes. When nicely browned on one side, turn with a flat spoon on to the other side and lightly brown. Remove on to a dish and fry the next one until they are all done. Serve hot.

Date Cake:
Ingredients:
a) 1 cup maida, 1 cup chopped and pitted dates, 1 tbsp butter, 1-cup sugar, 2 tbsps Baking powder, 2 to 3 cups boiling caramel water and 1 tsp. Vanilla.
b) 1 cup white sugar, 1-cup brown sugar, 1 tbsp butter, cup nuts, chopped and 2 cups boiling water.
Method: Mix the ingredients in (a) together and put in a deep 22 x 32 cm. Tray. Mix the ingredients in 9b) together and pour over the mixture in the tray. Bake at moderate temperature for 40 to 50 minutes.
