Bamboo
Curry
Ingredients
4 cups chopped bamboo shoots cooked in ¼ tsp turmeric
and salt till tender. 5 cups of water 1 onion sliced
4 green chillies sliced lengthwise 4 cloves of garlic
(to be crushed) ½ tsp mustard seeds Ground masala ½
cup grated coconut 1 tsp red chilli powder ½ tsp cumin
powder ½ tsp pepper powder 2 tsp coriander powder ½
cup water salt to taste
Preparation
1. Heat oil in a degchi. Add the onion, mustard and
garlic and fry till brown. 2. Add in the ground masala
and the green chillies and fry. 3. Now add the bamboo
shoot, salt to taste and pour in the rest of the water.
Cook the curry till it boils and remove from the fire.
Serve hot.
