Bamboo shoots curry
Ingredients:
6 bamboo shoots, red chilly powder 10 grams, turmeric
powder ½ tsp, 5 grams coriander seeds, 3 grams cumin,
6 cloves garlic, 2.5 cm piece of ginger, a few pepper
corns, 1 tsp rice flour, cumin 1 tsp (roasted) and 50
ml oil.
For
tempering: ¼ tsp mustard seeds, 4-6 red chilies
and 2- spring curry leaves.
Method:
Peel bamboo shoots and take only the tender white
part, slice them, put in salt water for 24 hours. Drain.
Soak again in salt water for another 24 hours. Cook
in the same liquid till done. Grind together red chilly
powder, turmeric, coriander, cumin, garlic and ginger.
Heat oil and then add mustard seeds. When they crackle,
add curry leaves, whole red chilies, pepper corns and
ground masala and fry well. Add 1 tsp rice flour and
the cooked bamboo shoots. Simmer for a few minutes till
the bamboo shoots have absorbed the flavor from the
spice. Sprinkle roasted cumin powder over and remove.
