Drumstick
curry:
Ingredients:
1-cup arhar dal (cooked & smashed little), 4-5 drumsticks
(make it 3-4 long pieces), 2 onions (chopped) and coriander
leaves (chopped).
For
Masala: 2 tsp coriander seeds, 1 tsp cumin seeds, 1
tsp mustard, 2-3 cinnamon sticks, 8-10 cloves of garlic,
¼ tsp asafetida, ½ tsp turmeric powder, 3-4 tsp grated
dry coconut, lemon sized tamarind's pulp, 2 tsp of besan
or flour of jawar, salt to taste and jaggery, 10-12
green chilies (according to taste), 1-2 tsp cooking
oil.
Method:
First fry coriander seeds, cumin seeds, mustard
seeds, cinnamon, garlic, grated dry coconut, green chilies
and curry leaves with little oil. Grind all the masala
with coriander leaves. Heat oil in a vessel and mustard
and cumin seeds. Fry till they splutter. Then add chopped
onions and curry leaves and asafetida. Fry them till
onion becomes brown. Now add drumstick pieces, tamarind
pulp, salt, turmeric powder and jaggery. Cook them all
till drumstick becomes soft. And then add cooked arhar
dal, masala paste, besan or jawar flour paste and required
quantity of water and cook them. Garnish with coriander
leaves. Serve hot with rice or jawar roti.
